Hibernating's 'snow fun - learn to love winter

You may think I’m crazy, but winter is my favourite time of the year. What’s not to love about cozy sweaters, hot apple cider, and the pristine look of untouched snow!

I can of course concede that winter has some downsides, but growing up in Winnipeg, Manitoba where winter can last more than half the year, you have to be able to put a positive spin on the cold. In Winterpeg, Manisnowba (see what I did there?) winters were epic with snow piling up as high as our backyard fence allowing our dog to easily roam into the neighbouring yards.

Some people act more like bears in winter, choosing to hibernate and stay indoors more often than not. This winter, I want you to channel your inner Winterpegger and go outside to enjoy the cooler temperatures--skiing, snowboarding, skating, tobogganing, snowshoeing, building a snow fort or snowman—the possibilities are endless!

RECIPE: GINGER SNAPS

To me, the holidays are about getting together with family over delicious food. This holiday season I wanted to share something special with you: the recipe for my favourite holiday treat, straight from my mom’s kitchen.

Ginger snaps

  • 1 ½ cups shortening

  • 2 cups sugar

  • 2 eggs

  • ½ cup molasses

  • 4 cups flour

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 2 tsp cloves

  • 2 tsp ginger

Beat shortening until light and fluffy then add in sugar, eggs, and molasses. In a separate bowl, mix flour, baking soda, and baking powder together then add slowly to wet ingredients. Roll dough into small balls and cover in cinnamon spice mixture—don’t flatten. Bake at 350 degrees for 10-12 minutes. Enjoy!

HAPPY HOLIDAYS!

Happy holidays! Whether you celebrate Christmas, Hanukkah, Kwanzaa, or have your own traditions, I hope you are ending the year feeling accomplished and excited for what lays ahead!
